Cozy Butternut Squash Soup with Grilled Cheese

 When the air turns crisp and the days start getting shorter, there’s nothing better than a warm bowl of soup and a golden grilled cheese sandwich. This simple Butternut Squash Soup with Grilled Cheese is a cozy fall favorite — creamy, flavorful, and perfect for family nights at home.


It’s made with simple ingredients, naturally creamy (without heavy cream), and deliciously comforting. The grilled cheese on the side is the perfect companion — crunchy on the outside and gooey in the middle. 





Ingredients for the Soup

  • 1 medium butternut squash, peeled, seeded, and cubed (about 4 cups)
  • 1 tablespoon olive oil or butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon cinnamon (optional for warmth)
  • ½ cup coconut milk or dairy-free milk (or regular milk if preferred)






Instructions

  1. Cook the Veggies
    In a large pot, heat olive oil or butter over medium heat. Add the onion and garlic and cook for 2–3 minutes, until soft and fragrant.
  2. Add the Squash
    Stir in the cubed butternut squash, salt, pepper, and cinnamon (if using). Pour in the broth and bring it all to a boil.
  3. Simmer
    Reduce heat and let the soup simmer for about 15–20 minutes, or until the squash is tender enough to mash easily with a fork.
  4. Blend Until Smooth
    Use an immersion blender to puree the soup right in the pot, or carefully transfer it to a blender in batches. Blend until smooth and creamy.
  5. Add Creaminess
    Stir in the coconut milk (or regular milk) and heat through. Taste and adjust seasoning if needed.






Simple Grilled Cheese Sandwiches


You’ll Need:

  • Bread (white, sourdough, or whole grain)
  • Butter or dairy-free spread
  • Cheese slices (cheddar, mozzarella, or dairy-free alternative)



To Make:

  1. Butter one side of each slice of bread.
  2. Place one slice, butter side down, in a skillet over medium heat.
  3. Add cheese, then top with the second slice (butter side up).
  4. Cook until golden on both sides and cheese is melted, flipping once.


Cut into halves or strips — perfect for dipping!
